Chicken Breasts in Green Peppercorn Sauce

- 4 boneless chicken breasts
- 396.89 g can Swanson chicken broth (or other brand)
- 236.59 ml chablis
- 22.18 ml green peppercorns in brine
- 22.18 ml cornstarch
- 236.59 ml heavy cream
directions
- Brown the chicken breasts in a frying pan, just to add color.
- Place the chicken breasts in an oiled roasting pan, sprinkle with salt & pepper, & bake at 350 for approximately 20 minutes.

Sauce:
- Crush the peppercorns with a mortar & pestle or between 2 spoons.
- In a medium saucepan, add chicken broth, chablis, and peppercorns.
- In a small prep bowl, combine a couple tablespoons of the broth/chablis with the cornstarch & then incorporate back into the saucepan.
- On low heat, stir until slightly thickened.
- Add cream & stir.
- Remove chicken from oven (any juices from the chicken can be added to the sauce).
- Place chicken on plates & spoon sauce over each breast.
- Prep time includes the time to make the sauce while the chicken is cooking.
- The green peppercorns can be found in specialty shops or online.

As the oldest daughter of a working mom, having to get supper started was the beginning of my love of cooking. Learning & experimenting with what to "throw in" is half the fun, and anyone who says they can't cook is really saying they don't have the patience or interest (IMHO)! ;-) Using fresh produce from the garden is absolutely my favorite thing to do - winter in South Dakota can get loooong with "cardboard" produce from the grocer. Having grown up in the service, we were exposed to lots of different cultural foods. With a mom who also loved to cook, variety & trying new foods was a true treat!
DD (grrrl genius) joined RecipeZaar at the same time I did, and she'd like me to get *all* my recipes uploaded and use the site, rather than my sending paper copies. We'll see how quickly I accomplish that !
