  • In large kettle, cook chicken in water until tender.
  • Cool broth and skim off fat.
  • Bone chicken and cut into bite-size pieces; return to kettle along with remaining ingredients.
  • Simmer, covered, for at least 1 hour or until vegetables and barley are tender.
  • Remove bayleaf.

  1. A very easy to prepare recipe for a hearty soup, I used 4 chicken legs and simmered them for an hour, then removed and deboned the meat. Added carrots, celery, a couple of potatoes and a few pieces of turnip and two onions. I used the bay leaf, savoury, parsley, pepper, salt and chicken bouillon. When the vegetables and barley were tender I put the chicken into the pot and served the soup. It was the perfect meal on a very cold winter day!
     
  2. we used 2 lbs chicken breasts cubed and boiled it in 2 quarts turkey broth then added remainder of ingredients except for the chicken bouillon cube and salt. We are trying to cook and eat with less or no salt and this soup had Excellent flavor. Very hearty and great for our entire household of sick people with colds. Forgot to add the stars
