Chicken Barley Soup

A very easy to prepare recipe for a hearty soup, I used 4 chicken legs and simmered them for an hour, then removed and deboned the meat. Added carrots, celery, a couple of potatoes and a few pieces of turnip and two onions. I used the bay leaf, savoury, parsley, pepper, salt and chicken bouillon. When the vegetables and barley were tender I put the chicken into the pot and served the soup. It was the perfect meal on a very cold winter day!

  1. In large kettle, cook chicken in water until tender.
  2. Cool broth and skim off fat.
  3. Bone chicken and cut into bite-size pieces; return to kettle along with remaining ingredients.
  4. Simmer, covered, for at least 1 hour or until vegetables and barley are tender.
  5. Remove bayleaf.
