Wow! Goodbye to my search for a good bean and bacon soup. I think the only thing I did different was to not use the shallots. My only disappointment was the kids weren't quite as thrilled as my hubby and I...one said it was too spicy and one didn't like the chicken. I actually tasted the soup before adding the chicken and it was still quite good so I might do without the chicken next time but I hate to give up on the heat, which I don't really feel is that strong.
I love bean and bacon soup and loved this Portuguese version with a little kick!!!! I made 1/2 of the recipe and cheated and used canned Northern Beans, but otherwise, followed as written. I picked a perfect summer day to make it, as it became very dark and then stormed while I was making the soup, so not so hot and humid. I loved the wonderful smokey bacon flavor. Absolutely wonderful - one of the most flavorful soups I've made in a long time. This one definitely goes in the keeper cookbook, to be made this winter. The bacon in this soup gives a nice smokey flavor, which we really enjoyed. Made as written for ZWT8 - Spain/Portugal for the Herbaceous Curvaceous Honeys.
We really enjoyed this soup. I used homemade chicken broth and added some diced potatoes, green beans and carrots to make this a complete meal but other than these additions I made the recipe exactly as posted. Thanks LifeisGood. Made for ZWT 8.
Made this tonight to take to work throughout the week. I know the bacon won't stay crispy but I am okay with that since it is just me. Husband taste tested and said bason added a lot and the soup was delicious. Here are the changes I made (not many). Adding more as a personal note for next time I make (and I will make it again!).
I roasted 2 bone in breasts for about 45 minutes at 375, sprinkling with poultry seasoning and salt. Used all the meat (a little more than 3 c.). I upped cayeene to a heaping 1/2 tsp. Cooked veggies etc in broth for a while as I did other things around the kitchen, then added chicken and 2 cans beans (1 great northern and 1 navy) to simmer for about 15 minutes. Added bacon last. I was a little intiminded by all the ingredients and directions listed. But it is quite an easy soup to make and the flavor is bold and flavorful. Be prepared it makes a huge amount of soup!
Good soup!! I followed the recipe ingredients exactly, except that I used canned beans. I didn't have time to soak the beans. Would make this again for sure. Mmmm.
Oh, my - this was a fabulous soup! The only change we made was to increase the cayenne pepper to about a teaspoon, which gave it a healthy kick. Gotta love Emeril! :)
