  • Heat butter in a large skillet over low heat.
  • Add onion, rosemary and poultry seasioning and cook until onion is translucent, about 3 minutes.
  • Stir in potatoes, chicken, apples, salt and pepper; cook, stirring ad scraping up browned bits on botom with spatula until mixture is browned, 15-20 minutes.
  • Sprinkle with parsley.

  1. I decided to make this with sweet potatoes (yams). I really liked it but it was not well received by the family. Hubby said it was too sweet and would like it if it had 50/50 with white potatoes. I used leftover chicken from Recipe #234424 which worked perfectly. One thing that I didn't count on is the texture difference with sweet potatoes. The recipe calls for cooking them first. I used the microwave and they go from hard to super soft and moist. If I make it again with the yams I will just dice them and cook them with the hash. I may also try with white potatoes when we decide to add those back into our diet.
     
  2. First I sauteed a large boneless skinless chicken breast in my fry pan. I set that aside to cool. Then, I cheated and used a bag of ready cut cubed hash brown potatoes with onion. I figured that two heaping cups is about the equivalent of two baking potatoes. I cut up the chicken and added that with a finely diced Gala apple to the mix. This came together very quickly and was a hearty, one-dish weeknight meal. Maybe my boyfriend and I have big appetites, but I would say this makes two servings as opposed to four.   3. Great food! I added more onion b/c I needed to get rid of some onion. It was a little bland so I would increase the poultry seasoning and rosemary. I used a 1/2 teaspoon of fresh rosemary b/c this what I had on hand. I would double the dish if using this for a main dish. ZWT for the Count Dracula and His Hot Bites.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
