This made for a nice afternoon lunch on a spring day. I topped mine with a sprinkling of chopped pecans for added crunch. :)

This is simple and flavorful salad to make!! Made using store bought chicken strips, red onion (out of green) and forgot the tarragon, but was still good. Ate as is; no bread or crackers with it. Will make again! Made for Everyday is a Holiday Tag February 2010.
This is a fabulous and easy chicken salad. I used a bit extra tarragon, because I just love that stuff. I loved all these flavors together. The flavors improved the longer it chilled. Thanx for a great lunch and use for leftover chicken!
I was looking for something I could toss together quickly at lunch that would hold me over until a late dinner. This was super fast and loaded with protein, so fit the bill perfectly. The tart cranberries and apple go very well with the tangy dressing. DH and I both ate ours in a wheat pita, lettuce would have been a great addition, but we were out.
Simply scrumptious. It took about 12 mins starting with a raw chicken breast. Hows that for fast food!. I didn't have the ask for cranberries so used raisins. The still hot chicken made for a warm salad which was very welcome at this time of year. It's crunchy, soft, creamy, sweet and tart and really great. I'd happily serve this to guests at any time of year.
