Chicken and Wild Rice Casserole

This is a recipe courtesy of Cathy Lowe. It is very delicious and easy to make.

  1. Preheat oven to 350 degrees.
  2. In a buttered casserole dish, combine chicken, cooked rice and beans.
  3. In a saucepan melt butter over medium high heat.
  4. Stir in onions and cook for one minute.
  5. Stir in flour and cook for 1 minute.
  6. Whisk in chicken stock and bring to a simmer.
  7. Whisk in cream or milk and return to a simmer.
  8. When the sauce has thickened pour over the mixture in casserole dish.
  9. Sprinkle with parmesan and almonds and bake for 30 minutes.
