Chicken and Wild Rice

- 29.58 ml olive oil
- 14.79 ml butter
- 236.59 ml onion, chopped
- 4 boneless chicken breasts
- 340.19 g mushrooms, fresh sliced
- 354.88 ml water
- 170.09 g long grain and wild rice blend, Uncle Ben's quick cook
- 566.99 g frozen chopped broccoli
- 118.29 ml light sour cream
- 118.29 ml cheddar cheese, grated
directions
- Cut the chicken breasts into strips.
- Heat oil and butter in skillet, and saute onion till translucent.
- Add chicken and cook 4 minutes per side.
- Add mushrooms.
- Cook until chicken is browned, and then remove chicken to plate.
- Add water, rice, and seasoning packet to skillet and mushrooms.
- Put chicken back in skillet, around edges.
- Add broccoli to middle of pan.
- Cover, bring to boil and reduce heat to low.
- Simmer till rice is done, which will depend on whether you used quick cooking or regular. (You may have to add more water).
- When rice is cooked, take out chicken and mix rice and broccoli with sour cream.
- Put chicken back in and sprinkle with cheese.
- Heat till cheese melts.

Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road. Jobs are not that plentiful here so I am fortunate to be able to work at home (I'm a writer).
