Chicken and Stuffing Florentine

Florentine refers to the spinach which is added to this recipe. It is a welcome addition, adding color and pizzazz. You could use 3 cups chopped fresh spinach instead of the frozen, if you wish. Recipe is from the Stove-Top people.

  1. Preheat oven to 400 degrees F.
  2. Mix stuffing mix, hot water, and cheese just until stuffing mix is moistened.
  3. Place chicken in a 13" x 9" baking dish. Mix soup and spinach; spoon over chicken. Top with stuffing mixture.
  4. Bake 30 minutes or until chicken is done.
