Chicken and Spinach Rigatoni Casserole

"Quick, easy and delicious. The recipe calls for 4 garlic cloves, but I only added 2 and should have added 3-4 cloves. I also added more parmesan because of preference. This is a hit with the kids. My friend Kathy sent me this recipe and now I am indebted to her forever."

  • Cook pasta according to pkg directions and drain.
  • Place spinach on paper towel and squeeze until barely moist.
  • Add oil to a large non stick skillet and place over medium heat until hot.
  • Add onion and garlic and sauté until tender.
  • Add chicken and cook until it loses its pink colour, stirring constantly.
  • Stir in tomatoes, tomato paste, basil, oregano and crushed red pepper flakes.
  • Bring to a boil and then reduce heat.
  • Simmer 5 minutes, uncovered stirring occasionally.
  • Combine pasta, spinach, chicken mixture and 1/4 cup cheese in a bowl; stir well.
  • Spoon into 13 X 9 baking dish coated with cooking spray.
  • Sprinkle with remaining 1/4 cup parmesan cheese over the top.
  • Bake at 350° for 20 minutes.
  • Makes 8 servings.

  1. I don't know what I did wrong. Maybe the tomatoes. I used chopped tomatoes in a box, from Italy, rather than canned. The recipe turned out dry, dry, dry! I was horrified! What would I tell my family at dinner time? But not to worry! I ran out and bought a jar of Mario Batali's Vodka sauce, re-mixed everything, a plate at a time, and and cooked each serving in the microwave for 1 minute. Voila! Delicious!! So not to worry. This is a no-fail recipe! Oh! Almost forgot: Texas toast and a salad rounded out the meal to the delight of all! Your recipe was a winner, in spite of me!

  3. This pasta was amazing. I followed the recipe rather closely but added more cheese at the end as a personal preference. I think I even enjoyed it more as leftovers. Will make again.

  5. Made this last night for dinner and overall am very pleased with how it turned out. I had a difficult time getting the sauce mixture to cover all of the rigatoni. I did not add the diced tomatoes, so I think this might have had something to do with it. I used 2 chicken breasts and what I had left of the frozen spinach I used earlier in the week--so tweaked the recipe slightly. Also added more cheese to taste. The chicken kind of threw off the overall "taste" of the dish. Next time I think I will leave the chicken out and just make the rigatoni and sauce mixture. My fiance and I enjoyed the kick of spices, as well. Will definitely make this again sometime in the future.

I live in Ontario and work full time as a consultant in IT for a communication company in another province. I create test cases and scripts and initiate the testing for the software changes that the programmers make to the company’s various programs. I have the pleasure of working from my home and dialling into their network. I also sell Avon for fun. I met my husband (Paul) on a blind date. We dated 3 years and have been married for 25 years. We have two children a son(age 20) and a DD(age 17). We have been blessed with the best two kids anyone could ask for. DH is a commerical airline pilot and currently is a "Check Pilot" on the A320. He is away quite a bit, so when he comes home I try to make sure he has a decent meal. He eats out when on the road so he really enjoys a good home cooked meal when he arrives home, while the rest of us want to go and eat out. I love to spend time in my garden, travel and try new recipes. DH and I love to travel or just spend time at a cottage in the summer. I have not been on a cruise but hope to within the next 2 years (maybe for our 25th wedding anniversary.) We pretty much eat anything. DH especially loves seafood (more than I do.) while I prefer to eat chicken. We are so predicable when ordering our meal at a restaurant. Next, I think it would have to be Italian and then something spicy like Thai or Indian. My family loves Indian food but I have never had the courage to make it. Maybe I will someday. I like to read true stories and criminal books. David Baldacci is one of my favourite authors. My favorite restaurant is "Bin 23", "Einsteins Cafe," "Abberfolye Mill" My brother sent me the link to Recipezaar and now I am hooked trying new recipes every day.
