Chicken and Rice Bake

  • 1 (10 3/4 ounce) can cream of chicken and broccoli soup
  • 1 12 cups water
  • 34 cup uncooked rice
  • 1 12 cups sliced mushrooms
  • 1 (2 7/8 ounce) can French-fried onions
  • 4 chicken breasts
  • paprika
  • pepper

directions

  • In 3 quart baking dish, combine first 4 ingredients and ½ can onions. Arrange chicken on top and sprinkle with spices. Bake at 375º for one hour. Top with remaining onions. Bake 3 more minutes or until onions are brown.

  1. great recipe and easy...i sauteed the mushrooms in a little butter and used chicken broth instead of water...for the rest, per the instructions...tasty comfort food .

  3. This was a good base. I changed a bit using what I had on hand. I used cream of chicken soup, about 1 1/2 cups frozen veggies, 1 real onion & a couple cloves of garlic. I didn't have any mushrooms to throw in or cream of mushroom soup, but I didn't miss it. Turned out to be delicious!
     
  4. I made this for dinner a couple of nights ago and have had the leftovers for lunch. 18 yo DS, who is very picky eater, loved this casserole. I did make a few changes, based on what I had on hand, no mushrooms so subbed cream of mushroom soup and probably added more than stated amount of the onions (love those), but otherwise made as written. DS has requested I make this again for dinner, so it will be a repeat. Thanks for sharing the recipe.
     
  5. I thought this was fantastic. I made a couple of changes though. I used chicken broth instead of water, and a little more of it, and for the rice I used a box of uncle ben's country inn chicken rice with the seasoning mixed in. I also didn't cover and it was perfect and super easy!!
