Wonderful summer time salad! I loved the chicken, sugar snap peas and strawberries combined. I must admit that I cut back slightly on the mandarin oranges... I do not care much for canned fruit, couldn't find fresh ones, and clementines were so over priced in the store. The only other change I made to the recipe was using pomegranate vinaigrette dressing in place of the raspberry as that is what I had on hand. Now that warm weather is finally here, I will be making this salad often! Made and reviewed for AUS/NZ Swap #64
Oh my! this is a summer dream come true. DH grilled the chicken outdoors and we had dinner inside where the A.C. is, lol. The flavors are wonderful together. The sweet of the strawberries and crips ness of the peas and crunch of the nuts are all marvelous woth the chicken. I had to skip the spinach and go with just the mixed greens.
Fabulous salad Debi! I usually only eat fruits and veggies, so this was heaven for me! Very pretty as well. I had asked my neighbor over for a birthday lunch, and served this. Deeelish! Thanks for sharing! Made for Green event at KK's site.
FANTASTIC!! We topped with Mustard Grilled Chicken (Light) and it complimented it perfectly. Even without the nuts (We forgot them!) we had men, women and children gobble it up and ask for more. Thank you for a wonderful recipe that I will be making often. (I think I'll add carrots next time too- Yum!)
Wow what a great salad! So fresh with all of the fruits, veggies and nuts and the chicken really makes this a meal. I used leftover Spicy Caribbean Glazed Chicken (I had made extra just for this purpose) and it was fantastic. The raspberry vinaigrette was the perfect topper - absolutely loved this - thanks for sharing!
This is a wonderful light lunch. I used Greek Grilled Chicken Breasts for the chicken and I had to omit the sugar snap peas because the grocery didn't have any in stock. Thanks for posting this recipe.
