I made this for tonight. It was one of the recipe in the recipe book that I bought. Tasted good, I added some frozen beans and the book suggested to serve with couscous, but I didn't have one so I served with garlic and herb pasta. They were really yummy dinner and my sharemate liked them!

  1. Preheat oven to 180°C.
  2. Combine flour and salt and pepper on a plate.
  3. Lightly coat drumsticks in seasoning flour.
  4. Heat 2 tablespoons oil in a large frying pan over medium-high heat.
  5. Cook chicken, turning occasionally, for 5 to 6 minutes or until golden. Transfer to a shallow 8 cup capacity baking dish. Add chickpeas.
  6. Heat remaining oil in frying pan over medium-high-heat. Add garlic and onion.
  7. Cook for 5 minutes. Add tomatoes, stock, sugar and salt and pepper.
  8. Reduce heat to medium. Simmer, stirring occasionally, for 10 minutes until thickened slightly.
  9. Pour sauce over chicken, stirring to coat. Cover with foil and bake for 30 minutes.
  10. Remove foil and sprinkle with feta. Bake, uncovered, for 10 minutes or until feta has melted and chicken is cooked though. Sprinkle with parsley. Serve with couscous or pasta.

The flavours of this are amazing. Chickpeas especially good. I did cook longer than 10 min to melt the feta. Next time I would make with skinless chicken.

Oish kata desu Tomoko it was really good, but I knew it would be because it had lots of my favourite things in it-(tomato, chick peas, feta and chicken) so I had to enjoy it. I made it exactly how you said except for adding 1 teaspoon of dried oregano because it goes very well with all the other ingredients. We ate it on pasta because Mick doesn't like couscous, and we will make it again thank you :-)
