Comfort food at its finest. Simple and simply delicious! From my co-worker Sue. =)
- 3 chicken breasts, boiled 30 minutes and boned
- 1 package frozen broccoli, cooked
- 1 cup shredded cheddar cheese
- 1 can cream of mushroom soup
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- Stir the soup, mayo and lemon juice together.
- Layer in a small casserole dish:1/2 chicken, ½ cheese, 1/2 broccoli, 1/2 sauce.
- Repeat Bake 45 minutes at 350F.
This is a neat way to fix Chicken 'n Broccoli, Barb! Easy to put together, and, best of all, with ingredients I have most of the time anyway! The taste is just real good! My SIL gave me a microwave version for this, and it's really tasty, but, I shore like yours!! Thanks for posting...I definitely will make it again! Laudee
Wow, what a great dish! I didn't have frozen broccoli, so I steamed some fresh. I think the dab of mayonnaise and lemon juice made the soup taste better. I might even add more lemon juice next time. This dish is so easy to prepare, and tastes wonderful. Thanks, Barb for posting it. Definately a keeper to be used again.
This one is a keeper! I used frozen chicken breasts and they were rock solid when I started. After boiling for 25 minutes, they were at a temp just above 200 degrees. So I would check the breasts after 15 minutes with a meat thermometer, and then every few minutes thereafter so you don't overcook the chicken. I added fresh ground black pepper to the sauce. I used a round dish about 4 inches deep and 6 inches in diameter and it was perfect. It doesn't say what to do with the chicken exactly, so I decided to shred it into bite size pieces with two forks. On the top, I added a layer of Pepperidge Farm seasoned stuffing mix and sprayed it generously with cooking spray (melted butter tastes best but I was trying to keep the fat down). I baked it uncovered. All of my changes/additions worked out really well. Thanks for the tasty, easy recipe, Aroostook!
