We loved this recipe and it was so easy to make. I used frozen corn and omitted the cilantro, but otherwise followed the recipe exactly. I served it as a main dish with cheese bread and jalapeno poppers on the side. Thanks!
Yummy, yummy, yummy! My little one and I had this for dinner and loved it. I halved the ingredients except I used one chicken breast and an entire can of kidney beans. I didn't use lime zest and used frozen corn. A really tasty and very easy recipe. Thank you so much!

This is an excellent recipe. I just finished putting it together for a Father's Day hot weather dinner. My husband and I both sampled it and love it. I will be serving it with Tostito's with a hint of lime corn chips on the side. I am now anxious to try some of Christine's other salad recipes.
I put this together this morning for a quick lunch this afternoon. I can't wait to eat!! What I sampled was incredible. The blend of flavors is excellent. I did use sweet vidallia onion rather than red and frozen corn kernels instead of fresh (just due to ingredients on hand). Absolutely a keeper! UPDATE: Hubby stopped by for lunch...he ate several flour tortillas stuffed with this salad. He claims not to like lime or cilantro...oh well...he loved this!
Excellent salad! We just finished having this for lunch, I had mine on the lettuce and my husband had his on a tortilla roll-up. Both were so tasty. The only thing I added as some sliced black olives that I had leftover. I love lime and cilantro in anything and this dressing was so tangy, but not at all sour. This is a good recipe to use the leftover turkey from the holidays. Thanks for a keeper. Carole in Orlando
