As published in the Winter 2007 edition of Raley's Something Extra magazine.
- 4 cups banana squash, peeled and cubed
- 3 large boneless skinless chicken breasts, cubed
- 1 cup mole, sauce (like Knorr)
- 1⁄2 cup canned diced tomatoes with green chilies
- Combine squash, chicken, mole sauce and tomatores in a medium saucepan. Bring to a boil and simmer, covered for 30 minutes or until squash is tender.
