This is a Lancaster County version of Chicken & Biscuits/Dumplings. It's very tasty, quick & easy. ENJOY!
- Saute onion in butter.
- Blend in flour& salt.
- Add broth.
- Cook& stir until thickened.
- Add chicken& vegetables.
- Heat until bubbling.
- Pour into casserole dish.
- Cut biscuits into fourths, and place on top of casserole.
- Bake at 425 for 8-10 minutes.
Very quick and very easy to make. I did cut the biscuits in eighths and cooked them in individual soup turreens (made 5 in all). Was a bit bland. Needs spices.
The only change I made was in using turkey instead of chicken. It was very bland and I wouldn't make it again. If you want to try this recipe I would use some fresh cream or half and half - add some extra flour or corn flour for thickener - red pepper flakes for heat and a tsp of either italian seasoning mix or a tsp of poultry seasonings. That's just my thoughts
This appeared to be a little bland for our liking, my husband doesn't eat onions so I changed it a bit. I used 2 cups of chicken broth, 1 cup heavy whipping cream and 1 cup milk along with some chicken bouillon and twice the butter. I also added 1 tsp. of salt instead of the 1/2 tsp. called for along with some freshly ground white pepper. Some additional flour is necessary with the addition of the extra liquid. It turned out luscious and very creamy.
