  • In a large saucepan, cook onion in butter until tender.
  • Stir in chicken, soup, sour cream, mushrooms, green chiles, oregano, salt, and pepper.
  • Spoon approx 1/2 cup chicken mixture in center of each tortilla; roll up and place seam side down in a lightly greased 13x9x2 inch baking dish.
  • Combine topping ingredients.
  • Spoon over tortillas.
  • Bake, uncovered at 350°F for 35 minutes.

  2. This is one of my families favorite recipes. My mom has been making this out of the southern living cookbook since I was a kid. I just wanted to chime in because this recipe is missing the 1/2 c. toasted sliced almonds in the chicken mixture that really makes this ah-mazing. If you want it spicier you can also dice a fresh jalapeno and saute with the onion in the first step. Very, very, tasty.

  4. With the name Chicken Alcapulco, you'd think the dish would be spicey. It's rich, creamy and far from spicey. DH really liked it but agreed with me that it needs more spice to go with the wonderful flavor of the green chilies. Next time I'll try some ground jalapenos or cayenne pepper. Thanks NurseDi -I'm a follower of your recipes!

My eldest son is staying with us awhile and he's never tried any type of dish using the likes of tortillas or green chillies, I chose this recipe for his initiation and he was very impressed (as we all were!) The hint of spice is just what I like and the creaminess of the chicken divine. I am really enjoying your recipes NurseDi thank you for sharing.
