This is one of my families favorite recipes. My mom has been making this out of the southern living cookbook since I was a kid. I just wanted to chime in because this recipe is missing the 1/2 c. toasted sliced almonds in the chicken mixture that really makes this ah-mazing. If you want it spicier you can also dice a fresh jalapeno and saute with the onion in the first step. Very, very, tasty.

With the name Chicken Alcapulco, you'd think the dish would be spicey. It's rich, creamy and far from spicey. DH really liked it but agreed with me that it needs more spice to go with the wonderful flavor of the green chilies. Next time I'll try some ground jalapenos or cayenne pepper. My eldest son is staying with us awhile and he's never tried any type of dish using the likes of tortillas or green chillies, I chose this recipe for his initiation and he was very impressed (as we all were!) The hint of spice is just what I like and the creaminess of the chicken divine. I am really enjoying your recipes NurseDi thank you for sharing.
Oh Yeah!! My family and I sure enjoyed eating this one. Tasted like very rich and creamy chicken enchiladas. I liked that is was mildly seasoned. I don't want everything I eat to knock me on my a@#. A 5-star winner for us. Thank Nurse Di.
I made this and it was very good. I would put this in mexican dish category. I do like my mexican dishes to be hotter so next time I make it I will spice it up. I will definetely make this dish again.
