Found this in bottom of my recipe box, I had cut this from the Miami Herald many years ago to try. Now 20+ years later I made it for my family and we love it! We loved the onions in the bottom of the pan and I plan on doubling the amount the next time I make it. NEEDS TO MARINADE OVER NIGHT!

  1. Marinate chicken in wine over night.
  2. Discard marinade.
  3. Preheat oven to 350 degrees.
  4. Place sliced onion on the bottom of 13 x 9 inch baking pan.
  5. Dot onions with 1/4 cup mayo.
  6. In mixing bowl, combine remaining mayo, garlic powder, salt & pepper.
  7. Coat chicken thoroughly with mayo mixture and place on top of onions.
  8. Bake covered, at 350 for 35 minutes.
  9. Uncover & sprinkle with Parmesan
  10. Bake 15 to 20 minute more until bubbly.
