I promised my daughter I could make yummy brownies WITHOUT a box mix! When I went looking for a recipe, I wanted "something" nutritionally "good" in the recipe. This is what we came up with. Its a chewy, chocolatey brownie you can dress up with nuts, chips, marshmallows or m&m's.

  1. Combine sugar, eggs and vanilla with a fork.
  2. Combine dry ingredients (up to oats) in separate bowl.
  3. Mix wet and dry ingredients together well with fork.
  4. Stir in nuts.
  5. Spread batter evenly in a greased 8 x 8 pan.
  6. Bake at 350 degrees for 30 minututes.

I really liked these bars. The oatmeal added a good coconutty, chewy type texture. They had a deep chocolate taste and were very quick and easy to make. I baked mine for 25 minutes.

To prevent the "drying out", I baked these for 25 minutes only. I loved the fact that it was chocolaty enough , but reduced the sugar to 3/4 cups since I was using brown. Oh yeah, and I used chopped and toasted hazelnuts:) In your instructions, the butter wasn't mentioned at all, so what I did was to melt the butter (salted), add cocoa, sugar, eggs, vanilla, flour, baking powder, and fold in the oats and nuts in this order. Thank you:)

These were ok. I have a ton of oatmeal I want to use up so I made this. We didn't really care for the oatmeal in the brownie. It gave it a strange texture and I think dried it out. They were much better warm with a scoop of ice cream and some butterscotch topping.
