Mmmmm...a glass of milk with these is mandatory. Soo good. I thought they were perfect without the last step of rolling in sugar. I rolled a couple in sugar but thought them too sweet. The rest I made plain and they were the best! These cookies definitely are chewy and spread out on the pan. Interesting there is no egg in this recipe but it didn't need it. This is a duplicate recipe and I just rated the other one with 5 stars too. This is an awesome, tasty, delicious cookie! I made it for sharing and decided to keep the whole batch for just us! :) I used regular chocolate chips for the 7oz semi-sweet (worked fine) and used crystallized ginger for the fresh since I didn't have fresh ginger and the cookies were awesome! Since they never made it to Christmas I think I'll be making another batch of these today. Love it!

Wow! These are my absolute favorite cookies ever! These are the only cookies I ever make anymore and my friends love them. I add crystalized ginger and a pinch of cayenne pepper for an extra kick. Yum.

I'll give these three stars because although they looked beautiful, I was not a fan of them. (My grandma loved them though). I just found the ginger way too overpowering. I think it was the fresh ginger. I didn't put in the whole amount it called for, only about 1 teaspoon. Also I found the chocolate chunks made it too sweet for my tastes. But like I said, they look gorgeous! I pressed mine down with a fork, like you do with peanut butter cookies, because the first batch didn't flatten out too much. I'll definitly still give them away with my other cookie trays, because I think it's probably just my personal taste. Everyone else who tasted them said they tasted fine. Thanks for the recipe!

I've made these a couple of times since coming across the recipe in Martha's Good Living magazine. They are wonderful cookies - great texture and the ginger/chocolate combination will make your taste buds sing! Try them. You won't be disappointed.
