Chevre and Pear Quesadillas

- 2 pears, peeled
- 1 tablespoon olive oil
- salt and pepper
- 10 ounces soft fresh goat cheese, crumbled
- 8 ounces monterey jack cheese, grated
- 1 green onion, sliced
- 6 soft flour tortillas, 10 inches in diameter
directions
- Cut pears in half and remove cores. Cut into 1/3 inch thick slices. Toss slices with olive oil and a little salt and pepper. Grill or saute for 1 minute on each side.
- Chop pears into 1/2 " dice. Combine pear, cheeses and green onion in a bowl. Mix well.
- Divide mixture into 6 portions and spread one portion onto half of each tortilla. Fold tortilla in half.
- Heat a non-stick or cast iron pan over medium heat. Cook each tortilla for about 1 minute per side or until cheese melts.
- Cut each tortilla into 4 pieces.

I collect cookbooks and food literature. My all time favourite food writer is MFK Fisher. If you have not read it, I commend her short story "Borderland " to you. It is one of the most evocative pieces of food writing ever. My current favourite cookbook is "Urban Italian - Simple Recipes and True Stories from a Life in Food" by Andrew Carmelini.
For years I managed to hang on to all of my back issues of Gourmet some of which date back to the 1980's. Sadly, I recently lost that particular battle and to promote marital harmony, I am recycling my old mags but am posting my favorite Gourmet recipes along with some interesting ones worthy of a test drive.
