ingredients
- 1 lb butter, room temperature
- 1 cup powdered sugar
- 1⁄2 cup cornstarch
- 1⁄2 teaspoon salt
- 1 tablespoon vanilla
- 3 cups flour
- 1 1⁄2 cups dried cherries
- 3⁄4 cup chopped pistachio nut (optional)
- 1 lb powdered sugar, for rolling
directions
- Cream the butter, powdered sugar and cornstarch. Add the salt, vanilla and flour and mix to a nice dough. Fold in the cherries and nuts.
- Roll in 1 inch balls and bake at 350* for 8-10 minutes on parchment lined baking sheets.
- Roll warm cookies in powdered sugar coating well. When cool, re-roll in additional sugar.
