Cherry Vanilla Snowdrops

"If you love ButterBalls you will really like these. From a Martha Stewart Christmas magazine a few years back, these have fast become a favorite of mine at the holidays!"

• Yields: 84 cookies
• Serves: 40

ingredients

• 1 lb butter, room temperature
• 1 cup powdered sugar
• 1⁄2 cup cornstarch
• 1⁄2 teaspoon salt
• 1 tablespoon vanilla
• 3 cups flour
• 1 1⁄2 cups dried cherries
• 3⁄4 cup chopped pistachio nut (optional)
• 1 lb powdered sugar, for rolling

directions

1. Cream the butter, powdered sugar and cornstarch. Add the salt, vanilla and flour and mix to a nice dough. Fold in the cherries and nuts.
2. Roll in 1 inch balls and bake at 350* for 8-10 minutes on parchment lined baking sheets.
3. Roll warm cookies in powdered sugar coating well. When cool, re-roll in additional sugar.
