Cherry Tomato Salad

"Light, tasty, easy and elegant. This is another recipe I found in Everyday Food but used balsamic vinegar because of its flavor and added the small amount of sugar for less sour taste."

  • In a medium bowl whisk together balsamic vinegar, olive oil, coarse salt, ground pepper and sugar or sugar substitute. Add grape tomatoes cut in half, red onion and parsley.
  • Toss to combine.
  • Serve cold.

  4. This was a delightful little salad that I can't wait to make with homegrown grape tomaotes. I did omit the salt for dietary reasons without a problem. The balsamic vinegar gave the salad bold flavor wothout being overpowering. Served with simple broiled fish. Thank you SherriLaC for sharing the recipe.

I love to cook and bake. I learned to cook when I was very young. My grandfather and grandmother were both excellect cooks. I really don't use very many cookbooks but I do have many of the recipes that my grandparents used and some that I just remember.
