Cherry Pie (Filling Only)

"This recipe may be microwaved instead of cooked on the stove. If you wish to microwave it mix liquid, sugar and corn starch, microwave on "High" 2 or 3 minutes or until mixture thickens and boils. Stir once during cooking."

  • 2 cups tart cherries, pitted (fresh or frozen, thawed)
  • 34 cup liquid (juice or water)
  • 14 - 12 cup sugar (sweeten to taste)
  • 3 tablespoons cornstarch
  • 18 teaspoon almond extract

directions

  • Blend corn starch and sugar. (The amount of sugar can vary according to taste and if the cherries were frozen with sugar or not.)
  • Drain juice from cherries and add water to make 3/4 cup liquid. Stir liquid into corn starch mixture.
  • Stir mixture on high heat until mixture thickens and boils.
  • Remove from heat, stir in almond extract and gently fold in cherries.

  3. Made this today to avoid wasting some not-so-tasty cherries. I was pleasantly surprised at how well it turned out! I will be using the filling for a Black Forest pie.
     
  4. This review is just a comment to Moonlightie in response to there being no almond extract in Germany... In Germany it is called : "Bittermandel Backaroma." I have some from Germany (I live in Canada though). I am going to try this recipe in the next few days... Thanks!
     
  5. I used vanilla extract instead of almond and had to use flour as I didn't have cornstarch on hand but I used the microwave version and still came out very good. Probably would've been about perfect if I had cornstarch

Tweaks

  1. I did, however, chose to add a bit more sugar and i am out of almond extract. But it turned out way better than i thought it would.
     
  2. This recipe turned out better than I had hoped. I will be using it to top a cheesecake. One little tweak I made...I stirred in a small pinch of salt once the liquid had thickened, before folding in the cherries.
