ingredients

• Dressing

• 29.58 ml olive oil
• 29.58 ml fresh lime juice
• 29.58 ml frozen lime juice concentrate, thawed
• 1 jalapeno pepper, deseeded and minced
• 2.46 ml lime zest (use the above fresh limes to get zest)
• 1.23 ml chili powder
• 1.23 ml ground cumin
• 1.23 ml kosher salt, to your taste

• Slaw

• 946.36 ml green cabbage, shredded
• 709.77 ml fresh sweet cherries, halved and pitted
• 473.18 ml fresh spinach leaves, torn remove stems if you wish
• 236.59 ml jicama, shredded
• 118.29 ml cilantro, chopped (decrease or omit if desired)
• 118.29 ml red onion, diced

directions

1. In a small saucepan, combine dressing ingredients, heat to a boil, stirring to mix, set dressing aside to cool.
2. In a large glass serving bowl, combine slaw mix, tossing to combine.
3. Pour cool dressing over slaw, tossing to coat.
4. Serve.
