Dressing
- 29.58 ml olive oil
- 29.58 ml fresh lime juice
- 29.58 ml frozen lime juice concentrate, thawed
- 1 jalapeno pepper, deseeded and minced
- 2.46 ml lime zest (use the above fresh limes to get zest)
- 1.23 ml chili powder
- 1.23 ml ground cumin
- 1.23 ml kosher salt, to your taste

Slaw
- 946.36 ml green cabbage, shredded
- 709.77 ml fresh sweet cherries, halved and pitted
- 473.18 ml fresh spinach leaves, torn remove stems if you wish
- 236.59 ml jicama, shredded
- 118.29 ml cilantro, chopped (decrease or omit if desired)
- 118.29 ml red onion, diced
directions
- In a small saucepan, combine dressing ingredients, heat to a boil, stirring to mix, set dressing aside to cool.
- In a large glass serving bowl, combine slaw mix, tossing to combine.
- Pour cool dressing over slaw, tossing to coat.
- Serve.
