Chef Michael Smith Cucumber and Carrot Salad

This is a great recipe that came from my favourite cooking show, Chef at home. So simple and delisious. Soothing for the soul and body.


  1. Thinly slice cucumber and carrots. Place in a bowl and add vinegar, olive oil, honey, Tabasco sauce and season with salt. Toss well.

Micheal Smith is also one of my favorite TV chefs, so when I came across this recipe, I had to try it. It doesn't disappoint. Deliciously fresh tasting salad. :)

I was looking for a carrot salad type recipe and your dressing sounded good. I didn't have any cucumbers but I did use diced zucchini, raw broccoli florets, and a few dried cranberries. This was really delicious tasting. The honey is great with the cider vinegar.The hot sauce gives it a slight zing, that I can see would go well with cucumber. Thanks Shandibear! Roxygirl
