Chef Joey's Grilled Goat Cheese and Scallion Sandwich

- 1 scallion (sliced thin)
- 113.39 g goat mozzarella cheese
- 2 slice bread (I used Jewish Rye)
- 29.57 ml mayonnaise (I used Vegenaise)
directions
- Heat up your grill.
- Spray the outside of your bread with a little sunflower oil. You could use other spray oils too, but this is what I have on hand.
- Flip the bread over and generously slather the mayo on both slices of the bread.
- Slice your cheese (you could use other cheese here) very thin and lay 1/2 of it on top of the mayonnaise.
- Place the chopped scallion on top. Put the rest of the cheese on top of the scallions.
- Top with the second half of the bread.
- Grill for about 5 minutes. Less if you have a bigger grill.
- Bon Appetit!

I love any cookbook that promotes good health and tasty meals. I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not.
Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
