No-bake chocolate oatmeal cookies with peanut butter. Chef Bob is an executive chef and a regular guest chef on our local Fox affiliate. These cookies were recently featured on "Good Day Alabama."
- 1 cup milk
- 1 cup shortening
- 8 tablespoons cocoa (heaping)
- 4 cups sugar
- 1 cup peanut butter
- 2 teaspoons vanilla
- 5 cups quick oats
- Bring milk, shortening, cocoa, and sugar to a boil for 2-3 minutes - melting the sugar.
- Add peanut butter and vanilla. Stir and add oats.
- Stir again then drop by spoonfuls on wax paper. Allow to cool and set.
What a nice blend of flavors for a no-bake cookie. I was having a tremendous craving for chocolate the other night and threw 1/2 of a recipe together in no time at all. I did use dark cocoa for this recipe (as that is all I had) so they were a bit richer than probably using a different cocoa but very tasty! A half recipe gave me 44 cookies so beware that this recipe gives tons of cookies! They store and save well - it is day 3 and they are still fresh and moist which will be wonderful when I make them for school lunches again this fall. Thanks for sharing a keeper!
