Chef Andrew's Berry Cobbler

"I saw this made on our local tv station by Chef Andrew who suggested using fruits in season while we have them. My 7 year old and I have been making this all summer and it disappears within a day of making it. It is pretty tart so those with a sweet tooth may want to add a little sugar. For those who use frozen fruits, add a little more cornstarch."

  • Preheat oven to 375.
  • Gently combine (so you don't smash the fruit) all fruit.
  • filling ingredients and set aside.
  • Combine baking soda, salt and flour.
  • Cream together.
  • butter and sugar until light and fluffy.
  • Beat in egg.
  • yolk and vanilla.
  • Add dry ingredients with a spatula.
  • Place fruit filling in an 8 inch non-metallic baking pan.
  • Evenly distribute tablespoon sized clumps of cobbler.
  • across the fruit.
  • Bake 40 minutes or until crisped and bubbling.
  • Let cool.
  • a bit but serve warm.
  • Great with ice cream.

I live in Minnesota and own my own business - I am a manufacturers sales representative. Since I travel some and my husband travels a fair amount in his job, I love to cook to unwind and bring the family together over a home cooked meal. When one or the other is traveling, left-overs work great! Since I like to try new recipes in addition to the old family stand-by's my 6 year old loves to be in charge of labeling the new ones "keepers" or "throwers."
