- 14.79 ml vegetable oil
- 453.59 g ground chicken
- 1 medium onion, chopped
- 1 jalapeno peppers or 1 serrano pepper, seeded and chopped
- 1 garlic clove, minced
- 236.59 ml converted rice
- 793.78 g can diced tomatoes with juice
- 170.09 g can tomato paste
- 396.89 g can chicken broth, divided
- 113.39 g ortega chilies, diced
- 4.92 ml cumin
- 4.92 ml chili powder
- 3.69 ml salt
- 1.23 ml black pepper
- 425.24 g can black beans, drained
- 311.84 g can corn, drained
- 236.59 ml cheddar cheese, shredded
directions
- In a 12" skillet, heat oil over med. high heat. Add chicken, onion, jalapeño and garlic. Cook,stirring to break up meat until it is no longer pink and vegetables are softened.
- Stir in rice, tomatoes with juice, paste, 1 Cup broth, chilies, cumin, chili powder, salt, and pepper. Bring to a boil, stirring occasionally.
- Reduce heat to low, cover and cook till rice is tender, about 30 minutes.
- Stir in beans and corn and continue cooking, covered, until beans and corn are heated.
- Just before serving, stir in cheese. If needed, stir in some more of the chicken broth.

I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
