Cheesy Scrambled Eggs With Green Onions

ingredients
- 8 eggs
- 236.59 ml milk
- 4 slice cheddar cheese
- 4 green onions, sliced thin
- salt
- pepper
- 1 jalapeno, seeded and diced fine (optional)
directions
- Whisk together eggs and milk.
- Heat skillet over medium heat.
- Add egg mixture.
- When eggs start to set, push around continually with spatula.
- When eggs are half set, but still runny, add onion and cheese (and jalapeno if desired).
- Continue stirring around till eggs are set to desired doneness and cheese is melted.
- Garnish with Salt and pepper to taste.

I agree Darcy! This is a great recipe for adults, a wonderful cheesy concoction with the added bonus of spring onions, Mmmmm!! I used real Cheddar cheese, as in NOT sliced, but from a block of mature Cheddar. I also omitted the jalapeno as I thought the flavours were great already......I served this wonderful egg recipe on toasted wholemeal bread for a great start to the day! Merci Darcy - made for Autumn PAC 2009 - very much enjoyed. FT:-)

A single mom who grew up watching her own mother ( and Dad, and Grannie, and Uncle's, and Aunt's) in the kitchen, absorbing their techniques and recipes like a risotto absorbs stock and wine. Although, admittedly not as refined as a risotto... I'd describe my cooking as "Down home, family food with a decidedly southern, "comfort food" feel, accented with the new flavors and experiences I've had after leaving the nest."
