I have made this twice now, and only eaten it once. I needed something to do with canned Cheddar Soup, so I dumped everything into a crock pot and let it cook, the first time hubby and the kids ate it all and didn't save me any, this time they did.
- 8 boneless skinless chicken thighs
- 1 (10 ounce) can condensed cheddar cheese soup
- 1⁄2 cup salsa, I used mild but you can use any kind
- Place chicken in crock pot.
- Stir together soup and salsa and pour over top of chicken.
- Set crock pot on high for 4 hours.
- Serve with rice or noodles.
I made this for dinner last week and my boyfriend loved it. I baked mine in the oven because I didn't find the recipe until I was already at work, so it was too late to throw it in the crockpot. I just put it in my baking dish, covered the dish with foil and baked at 350 degrees for about 50 minutes. The chicken turned out super moist and the sauce had great flavor. Thanks for sharing.
This was good and super easy! I only used 5 chicken thighs, but left the sauce unchanged. We served it with brown rice and a black bean and corn medley. Good!
My family loved this! It was really easy for me to throw in the crockpot in the morning, almost no work at all turned into a wonderful dinner. Since I had to put this in the crockpot in the morning I cooked it on low instead of high for about 7 hours and it was perfect. The chicken was moist and had great flavor and there was plenty of sauce. I didn't have any cheese soup on hand so I used 10 ounces of ragu cheese sauce and it was perfect.
