Thank you Diggy for a quick rice casserole,oh did I forget good? It is very good! I used fresh mushrooms,since I had them in the fridge & needed to be used---Thanks again for posting.

Ingredients Nutrition

  • 1 (10 ounce) package frozen peas, cooked and drained
  • 1 (4 1/2 ounce) jar sliced mushrooms
  • 12 lb Velveeta cheese, cubed
  • 2 14 cups cooked rice

Directions

  1. Combine all ingredients in 1 1/2 quart casserole dish and bake at 350 for 20 minutes.
