I had left over baked potatoes from bunco night. So I made these to go with our chicken for dinner tonight. I used either low fat or no fat versions of most the ingredients. I stopped and filled a couple of the potatoes before I added the bacon so the vegetarians members of our family could have some and then added the bacon to the remaining filling before stuffing the rest. They were enjoyed by all. In fact DD liked them better than the main dish!
Wow, I can see how this made it into someone's best of the year cookbook. So yummy! Even with using nonfat cream cheese and sour cream and omitting the butter. I topped these with green onions and they were so good, you can really taste the ranch in them.
I loved stuffed potatoes, and this recipe was no exception. It was very good, and a great side dish for our dinner tonight. I've never added ranch seasoning before...it made for an interesting twist on a traditional taste. Thanks for posting! Made for Zaar 123 Hit Wonders.
Very tasty. Didn't add the salt; the bacon and ranch dressing was salty enough for us. Found the mixture alittle too running but that may be because I used a mini-processor vs. mixer. I still think I'd cut back alittle on the cream cheese, sour cream and butter anyhow. I had some leftover chopped onions from another recipe so I cooked with bacon also & liked it. Always thoroughly enjoy your recipes, thanks for another keeper.
Outstanding! I used Ranch Dip and Dressing Mix, low fat sour cream and low fat cream cheese. It was devoured and they wanted more! Thank you, Kittencal! This recipe made it into our book#179809!
Creamy and delicious! What a terrific flavor combo. I will definitely make these again. Thanks Kitten! Nick's Mom
