Cheesy Ramen Vegetables

Ramen noodles are not just for college kids, although this recipe comes from the book, "College Kids Cook" by Carol Field Dahlstrom. This is a filling little lunch dish or snack which has some health benefits along with ease of preparation.

Ingredients Nutrition

  • 1 (3 ounce) package ramen noodles, discard seasoning packet
  • 12 cup cooked frozen mixed vegetables, of choice
  • 1 tablespoon butter
  • 12 cup cheese, shredded (2 oz.)
  • salt and pepper


  1. Cook the noodles in boilling water according to package directions. When noodles are tender, drain.
  2. Add the vegetables, butter, cheese and season to taste with salt and pepper.
  3. Heat until everything is hot. Serve.
  4. NOTE: If you have leftover cooked meat, it may be added to the pot along with the vegetables.
