Cheesy Potatoes With Smoked Sausage

ingredients
- 1 (16 ounce) package smoked turkey sausage (original called for pork)
- 1 (20 ounce) bag shredded hash brown potatoes (refrigerated)
- 1 1⁄2 cups reduced-fat cheddar cheese
- 1 cup reduced-fat sour cream
- 1 onion, diced
- 1⁄8 cup Smart Balance butter spread, melted
- 1⁄4 teaspoon black pepper
directions
- Preheat oven to 350.
- Lightly spray a 13 x 9 inch pan with cooking spray.
- Cut sausage into 1/2" cubes.
- Combine all ingredients in a large bowl. Spread evenly in prepared pan.
- Bake 40-45 minutes, or until lightly browned. Let stand 5 minutes before serving.

After seeing all the photos of this recipe I had to make and review it for Family Picks during ZWT8. This is great comfort food and we will make it again! DH couldnt find turkey smoked sausage so he bought regular and I used unsalted butter instead of the Smart Balance spread. Thank you for sharing this recipe with us smellyvegetarian!

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!
To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
