I *LOVE* this recipe. This is the same recipe my mom uses for family get-togethers. I made a smaller and gluten free version of this recipe for dinner (you can find it under my recipes if you are curious).

One of our family faves. Tried it at Easter with Dill dip instead of sour cream and everybody loved it. Tonight we do the original recipe and we are adding ham.

omitted the stick of butter in the mixture, didn't think it needed it...

I used a 16 oz container of French onion chip dip instead of sour cream.
Gave it an extra kick...

We called this "party potatoes" growing up. I used Potatoes O'Brien to make mine, but if you are using plain hashbrowns, dice about half an onion and add it in with the potatoes.

Made this for a potluck breakfast at work --- Everyone loved it -- The best part was it was so easy to fix the night before and just heat in the microwave at work. I did add carmelized onions to the potatoes and a handful of additional cornflakes for the topping.
