I *LOVE* this recipe. This is the same recipe my mom uses for family get-togethers. I made a smaller and gluten free version of this recipe for dinner (you can find it under my recipes if you are curious).

We called this "party potatoes" growing up. I used Potatoes O'Brien to make mine, but if you are using plain hashbrowns, dice about half an onion and add it in with the potatoes.
Made this for a potluck breakfast at work --- Everyone loved it -- The best part was it was so easy to fix the night before and just heat in the microwave at work. I did add carmelized onions to the potatoes and a handful of additional cornflakes for the topping.
