      Brought these to a party... they were fairly easy to make and pretty tasty! This was my first time making any kind of potato skin recipe, I'm inspired to try others now.

      This was a wonderful addition to tonights dinner. I cut back on the amount of Sun-dried tomatoes, but followed the rest of the recipe. The tomatoes really added extra flavor and DH didn't drown them in Ranch Dressing! (Huge Compliment) Made for PAC Fall 2008.

      These were really good. I do think that the sun-dried tomatoes were a bit overpowering. Next time I would cut the amount in half, that way the other flavors would get a chance to stand out also. Both the Parmesan and mozzarella cheese want to be tasted too. :) Thanks rickoholic83 for posting.

      I just made 1/4 recipe and I used lowfat rather than nonfat sour cream. This was a nice potato treat, to which the tomatoes add a flavor that almost borders on pepperoni--very interesting. A nice, not-horribly-high-calorie treat.
