  • Mix together all ingredients, reserving 1 cup of cheese for topping.
  • Bake at 350F degrees for 60-90 minutes.
  • Add cheese for last 20 minutes.
  • Crumbled (cooked) bacon or sausage may be added if desired.

  2. A great dish, either for brunch, or as a potato side dish with ham. I cut the butter in half, added some fresh thyme, and used cream of mushroom. Everyone loved it, even the picky kids!
     
  3. Love these. I always sautee the onions in a little butter and thyme first to make them "mine". Everyone loves the thyme, it makes them stand out from the regular cheesy potatoes. This recipe has the right amount of cheese to potato to creamy goodness ratio. Thanks
     
  4. This is a delicious recipe. I ended up using three cups of cheese, instead of two. Green onions also work well, replacing the regular onion. This is super easy to make and we never have left overs. In my opinion it's one of the best potluck/pitch-in side dishes that you can make.
     
  5. I'd never made a hash brown casserole for our Easter brunch - always just fried them, but I decided to make things easy on myself this year and made these...a major hit in our household. I didn't change a thing and it turned out great. Thanks!
