Cheesy Orzo

"This is Rachael Ray's recipe for a great sidedish to use when you're tired of plain old rice (or if you just love orzo, like I do)."

  • Preheat an 8-inch pot with a tight fitting cover over moderate heat.
  • Add oil, onion and garlic and saute for 2 or 3 minutes.
  • Add broth to the pan and bring to a boil.
  • Stir in orzo and return to boiling.
  • Cover pot and reduce heat to simmer.
  • Cook 15 minutes, stirring occasionally, or until liquid is absorbed and orzo is tender.
  • Remove lid and stir in cheese.
  • Add salt and pepper to taste.

  1. We liked this a lot. I halved the recipe but used the whole amount of cheese, added about a tablespoon of light cream cheese and a splash of fresh lemon juice. I used vegetable broth, making it a vegetarian dish (for a guest.) The cream cheese made it creamy, the lemon juice made it bright! I had the leftover for lunch today with a little butter. YUM!   5. Made for Fall PAC 2012 and I am so glad I did. What an easy and delicious side. I cut the recipe in half and used homemade chicken broth but followed the rest of the recipe. Served with recipe#332328#332328 and fresh sauteed spinach for a wonderful meal. Thank you for posting and I know this will be a regular in our home.

Tweaks

  1. This turned out well, my only problem was lack of cheese. I ended up doing 1 and 1/2 cup of cheese instead of just 1/2 cup, otherwise it tasted too much like chicken rice a roni.
     
  2. I intended to make risotto but had no arborio rice so went to the orzo instead... this is a fabulous recipe! I didn't have any parmigiano or romano so used fresh grated swiss! Who'd thunk it would work...but it did - deliciously! Also, added frozen peas and corn..I'll serve this again.
     
  3. I just made a half batch of this and oh YUM! Just be careful, if you make a half batch, you might want to reduce the cooking time by a couple minutes, it stuck to the bottom of my pan a bit. It didn't burn though, thankfully! For the half batch, I used 2 bullion cubes and water instead of chicken broth, and so I added a little more orzo. I used mozzarella cheese, as well as some Kraft Shredded Parmesan, Romano, and Asiago cheese blend, and also some Kraft grated Parmesan. Yum!
     
  4. I have made this many many times after seeing it on a "Picky Eaters" episode of Rachael Ray's "30 Minute Meals." It is always a huge hit with my husband, picky eater son, and now even our just-turned-one year old! I always half the recipe, use butter instead of olive oil, no garlic, and no salt and pepper. The parmesan took care of the salt I think. Anyway, it is incredibly easy to make, I usually have the ingredients around, and it goes with almost any main dish meat. I have even made it without the onion and used onion powder in an emergency. It didn't turn out quite as good as when I use the real onion, but it still really beat a prepackaged envelope sort of starchy side dish. A real winner - can't say enough good things about this orzo! It is really very versatile without being too generic.
