I tried this since it sounded kid-friendly, and it was! My kids snarfed it up and had seconds and thirds. I tweaked it a little since I am going wheat-free. You wouldn't have known it. I substituted brown rice penne and gluten free flour mix. Make sure to cook the pasta al-dente to keep it from getting mushy while baking. I used Hodgson Mill Multi Purpose GF Baking Mix in place of the flour. Also stirred in frozen peas & carrots at the same time as the ham.

I substituted 2 Tbsp dried chopped onion for the fresh since kids don't notice the onion pieces that way...just added them with the dried seasonings. Left out the cayenne. Also threw in a dash of ground celery seed, dried parsley, paprika, and garlic & onion powder. Delish!

Excellent dinner! Thank you! We did tweak it up just a bit and still came out delish. We used bacon instead of ham since my husband is not much of a ham person. We also used the Mexican Cheese instead of cheddar. Will be making it again soon according to the kids!

I really enjoyed this. I did add some steamed broccoli. The only downside was that it was super spicy. I usually like my food extra spicy but apparently it was too much for me. Next time I'll definitely lower the amount of both cayenne and black pepper. And there will be a next time! :)

I left out the cayenne and still thought it was too peppery. I thought my family would love it because we are cheese addicts, but no one really liked it. Just OK for us. Turned out greasy and the pepper was too much for our toddler. People who like spicy foods probably would like this more than we did.

Just Okay, I thought it would be cheesier with all the cheese in the recipe. Made a lot, we are a family of 3 and nobody had seconds. Hope it freezes okay!

YUM! I decided not to bake this, both because I prefer stove top mac and cheese and because I was running short on time, and it turned out delicious. The flavor is very nice and more complex that the usual mac and cheese, especially with a nice aged cheddar. I also took a cue from CulinaryExplorer's pic and added some peas, which turned out to be an excellent addition. Thank you for posting!

My whole family loved. I followed the recipe to a T and we gobbled it up. Barely had leftovers for lunch the next day. Awesome.

It was okay - but the kids didn't like it. I didn't care for the garlic in it and I think if I make it again I will not use as much cheese and leave the garlic out.

Cheesy Ham-Penne Casserole
