Amazing soup...super yummy!!
Oh good grief! This was souper! ;) I used shallots, mini red potatoes (skin on), Irish garlic & herb butter, and baby carrots.
Mmmm, made pretty much exactly as stated but used homemade ham stock and threw in some garlic powder (skipped adding chicken granules and salt). Also added a little milk as the veggies were simmering since I wasn't sure there would be enough liquid. Usually I use my stick blender to smooth everything out at the end but I forgot and just left it chunky and was glad I did. Very nice and flavorful, will save this for using leftover ham in the future.
This soup is wonderful provides whole meal. Changes to simplify:No peeling veggies: I used 2 cups of dehydrated potato slices I had in a box of hamburger helper I had on hand after I let them soak 10-15 min in boiling water, and then I added 2 cups of frozen hash browns. (Im going to use frozen hashbrowns from now on in cassarole dishes they are quick and delicious) I also increased onions to 1/2 cup. I did use the 1/2 and 1/2. The soup was asolutely delicious, and the nice thing about it is uses small amounts of ingredients left from other dinners like holiday ham you might be getting tired of and small amounts of veggies on hand left from other recipes
Delicious!! My entire family loved it! Followed the recipe (I didn't have any celery so I just added extra carrots). This is definitely one of our new family favorites! Thank you for sharing!!
This recipe is very good and will be my go to recipe for potato soup from now on. I made my own ham stock from a ham bone from a spiral sliced ham and the little left over ham we had. Everyone had seconds - enough said!!
