Cheesy Fillets

"Our favorite is flounder for this recipe, but any fillet will do. And goldfish crackers add a little bit of fun into the mix as well!"

I like easy, easy, EASY, quick, and did I say *easy* recipes??? My cooking goals this year have focused on using more white meat instead of red meat, using fish at least twice a week, substituting whole wheat pasta for regular, making more vegetarian dishes, all with recipes that take about 20 minutes to cook - if it takes too long, i'm not really interested in the trouble, unless company is coming over!
