Cheesy Croquettes

"From Recipe + - have altered slightly to omit the parmesan cheese and using all cheddar cheese and not the tasty cheese they suggested (original recipe is 1 cup tasty cheese and 1/2 cup parmesan cheese, both grated). Have included chill time in cook time. I couldn't see why these could not be made ahead to the point just before cooking (keep covered in the fridge)."

  • Place the potatoes in a saucepan of covered with water and bring to the boil and boil for 15 minutes or until tender.
  • Drain the potatoes and mash until smooth and then add 1 cup cheddar cheese, 1 tablespoon chopped chives and 1 egg yolk to potatoe, mix well and season with salt and pepper to taste.
  • Shape tablespoon measure of mixture into croquettes.
  • Combine 3/4 cup finely grated cheddar cheese in a bowl with breadcrumbs.
  • Place 1/2 cup plain flour in a bowl and lightly whisked egg in a separate bowl.
  • Dip the croquettes in flour, egg and then breadcrumb mix and place on a tray and chill for 30 minutes.
  • Pour enough vegetable into a heavy based saucepan to reach to a depth of 5cm and heat over moderate heat.
  • Deep fry in batches for 2 to 3 minutes or until golden brown.
  • Using a slotted spoon, transfer to paper towels.

  1. Very good recipe, Pat. I was a bit confused by the instructions, but I think I figured it out. I made them by adding the breadcrumbs to the 3/4 c cheese in Step #4. I think that is correct. Anyway, they turned out quite tasty and I plan to make them again. Served with ham steaks. Thanks for posting. (Made for PRMR).

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
