Something quick and "cheesy". Goes well with just about anything.
- 1 cup cornmeal (I prefer yellow)
- 1 cup shredded cheddar cheese
- 1⁄2 cup grated onion
- salt, to taste
- 3⁄4 cup boiling water
- Mix all ingredients thoroughly.
- Fry in hot oil until golden on both sides.
- Drain on paper towels.
- Serve warm.
