Cheesy Chipotle Chicken

I love to play 'Iron Chef' sometimes with what I have in my fridge and pantry. I came up with this chicken recipe using yummy melty fontina cheese and my favorite ingredient, chipotle peppers in adobo sauce!! I hope you enjoy!

Directions

  1. Preheat oven to 375 degrees F.
  2. Rinse and dry your thighs and place them in a glass baking dish.
  3. Heat the oil in a medium skillet on medium heat and saute the onions and garlic until soft (about 3 minutes).
  4. Stir in the adobo peppers and saute for 2 more minutes turning the heat down to medium-low.
  5. Stir in the BBQ sauce and fontina. Stir and melt the cheese with the sauce (about 4 minutes).
  6. Stir in the cream until blended then stir in the lime juice and blend well.
  7. Remove skillet from heat and pour sauce over the chicken thighs.
  8. Bake for 45 minutes or until chicken is no longer pink and juices run clear.
  9. Remove chicken from the oven to a serving platter and top with the fresh cilantro then serve!

Yummy!! I was in a bind, Had some fontina on hand and did an ingredient search and found your recipe. I did add the adobo sauce from the chipotle can and also cut the BBQ sauce with some red enchilada sauce. I also used chicken breasts because that's what I had. DH and DD loved it and told me I could make it again! That's a great recipe in our house!! Thanks.

This was very good, the DH and DS loved it. I somehow did not have onions so I added some onion powder, worked fine. I loved the creaminess of the Fontina, added great flavor. I think I would have liked more Chipolte flavor, but not heat. I used about 4 peppers and all the sauce from the can. I think it was the honey BBQ, I am going to use 1/2 tomato or enchilada sauce and 1/2 BBQ next time. I served it with rice. Thanks for a great recipe!
