Cheesy Chicken Lasagna

  • Sprinkle chicken with cilantro& rosemary then bake@350F for 45 min.
  • Remove from oven, let cool and slice.
  • Set aside.
  • Cook lasagna noodles to al dente.
  • Run under cold water and set aside.
  • Heat butter in skillet, saute mushrooms and set aside.
  • Heat olive oil on medium high in sauce pan, saute onions till translucent (about 5 min.) Add in flour and cook for 1 min.
  • Add in broth, milk, ricotta, cream cheese basil& oregano.
  • After all is melted lower heat and simmer about 10- 15 min.
  • Spoon a ladle of the cheese sauce into 9x13 baking pan.
  • Place 4 lasagna noodles.
  • Spread sliced chicken and spinach leaves, cover with half the cheese sauce.
  • 4 more lasagna noodles.
  • The next layer is the mushrooms, peppers and the mozzerella except about a cup.
  • Spoon about half the remaining sauce.
  • 4 more lasagna noodles.
  • Spread the remaining sauce and mozzerella on the top level.
  • Bake@350F for 45 min.
  • Let stand 5 minutes before cutting.
  • Enjoy with a glass of burgundy.

  1. Made for dinner tonight, though we thought it was good, we did agree that the amount of mushrooms was a little too much, taking away from the seasonings, otherwise it was okay. Made for Bargain Basement.

<p>I grew up in Niagara Falls Ontario and I was the youngest of 8 children. My mother cooked very plain and for stretching a budget. But she had a few dishes that she made that were fantastic and very tough to duplicate. I learned to cook on my own when I went away to school. <br />These days I live in Whitby Ontario, a small town of about 110,000 that is east of Toronto. I live with my wife Donna and our two great kids, Darby and Scott. <br />I like recipes that are not so complex that they take away the fun of cooking. I don't like a lot of preparation. I love to fill the house up with mouth watering aromas. I do the majority of the cooking at home mostly because I like doing it.</p>
