Cheesy Cheddar Broccoli Soup

I always thought my grandmother's broccoli soup was the best, UNTIL I tried this one!! It's easy, and OHH SO GOOD!! You can omit the puree step if you prefer a more chunkier soup, but I find that it produces a thicker, creamier texture.   1. Combine all ingredients, except cheddar and parsley in large saucepan.
  2. Bring to boil, stirring.
  3. Lower heat and simmer about 30 min.
  4. ,or until veggies become tender, stirring often.
  5. With slotted spoon, remove about half of broccoli, celery, and onion to food processor or blender.
  6. Blend until smooth.
  7. Return to saucepan and stir.
  8. Slowly add cheddar cheese, stirring constantly until cheese is completely blended into soup.
  9. Before serving, garnish with a sprinkle of parsley, if desired.

This was not my favorite broccoli soup. I didn't like the celery flavor nor the worcestershire in this.

yummy! the only thing i changed was using Veggie broth instead of beef broth. Thanks for the recipe!

I had a ton of brocolli left over from a get together and so this fit the bill in using some of it up. I did omit the puree` step as well as the wine (I was out) and I minced the onions versus chopping...makes it sound like I changed a lot but I didn't. This was so simple and you are right...very tasty. Thanks!
